    Responsibilities

    Is responsible for assuring that food preparation / sanitation practices and policies are followed in a safe environment.
    Assures that residents are prepared and served the diet prescribed by their physicians and according to quality food standards and the NCDA diet manual.
    Must keep accurate inventory of food products and supplies, including on (1) week emergency supply.
    Is responsible for remaining within budget (both food products and staffing); reports status to the Administrator.
    Is responsible for orientation of new dietary employees and participates in the orientation of all facility staff.
    Attends facility in-service education; helps conduct training related to dietary issues.
    Maintains company cleaning schedules.
    Works with residents and family to resolve concerns in diet selections and service issues.
    Performs other tasks or projects as directed by the Administrator.

    Qualifications

    High School diploma or GED required.
    CDM preferred but will accept five (5) years experience in the food service industry within a management or supervisory capacity.
    Experience with budgeting, purchasing and bulk food preparation.
    Willing to work with inspectors, monitoring and licensing agencies to maintain compliance with North Carolina Adult Care Home rules and regulation.
    Must supply the required work references and complete a criminal background check.

    Work Environment

    Well-lighted, air-conditioned / heated environment; may be exposed to residents with communicable disease or confused residents who become combative.  May be required to work outdoors on occasion when required by resident cookouts. 

     

    Protective Equipment Used/Equipment Needed

    Rubber gloves, goggles (protective) when working with chemicals or cleaning up broken glass.  Food preparation equipment (mixer, slicer, grinder, etc.), dishwasher, garbage disposal, stove, deep fryer, steamer and ice tea / coffee maker. 

    Office equipment (copier, calculator, fax machine, telephone, computer).
